That same research introduced a ratio comparing caffeine and EGCG against theanine and arginine, and found gyokuro’s ratio low enough to be classified as stress-relieving rather than purely stimulating.

That balance matters because gyokuro isn’t a low-caffeine tea. It actually runs higher in caffeine than most sencha, partly because the stress of shading prompts the plant to produce more of it as a natural defense. What’s different is how that caffeine feels once you drink it. I don’t reach for gyokuro when I need something fast. The leaves need low water temperature and a longer, gentler steep, and honestly, that’s the point. I treat a gyokuro session as a built-in pause in the day rather than a caffeine fix. It’s the tea I brew when I actually want to slow down and pay attention to what I’m drinking.

How to Brew Gyokuro to Preserve Its Benefits

Gyokuro rewards patience, and brewing it wrong is the fastest way to lose everything that makes it worth the price. Use water around 122 to 140 degrees Fahrenheit, well below boiling, since higher heat pulls out more catechins and pushes the cup toward bitterness rather than umami. A useful reference point for water temperature and steeping windows is that choosing a kettle with precise temperature control makes it far easier to hit that range consistently rather than guessing.

For two servings, use around 6 to 8 grams of leaf in a small amount of water, roughly 60 to 80 milliliters, and steep for 90 to 120 seconds. That’s a much smaller water volume and longer steep than most people use for everyday green tea, where general steeping guidance runs shorter and hotter. The small water volume is intentional. Gyokuro is meant to be brewed concentrated, almost like an espresso shot of tea, rather than diluted into a large mug the way you might brew sencha or bancha.

The leaves can typically be re-steeped two to three more times, and each subsequent infusion can use slightly hotter water and a shorter steep as the leaf’s compounds get used up. Many people notice the second steep is actually sweeter than the first, since the lower initial temperature holds back some of the theanine that gets released more easily once the leaf has already opened up. After the leaves have given up most of their character across multiple steeps, some drinkers eat them lightly dressed with soy sauce rather than discarding them, since gyokuro leaves stay tender enough to eat after steeping, unlike tougher, more mature tea leaves.

Why Gyokuro Costs So Much

Gyokuro’s price reflects the labor behind it as much as the taste. Farmers have to build or install shading structures, monitor light levels closely, and harvest by hand in a narrow window. Only the youngest, most tender leaves from the first flush are used, and production is concentrated in a handful of regions in Japan, most notably Uji, Yame, and Asahina, where growing conditions and generations of expertise in shaded cultivation have made those areas synonymous with quality gyokuro. Domestic demand within Japan is also high enough that a meaningful share of the best harvests never makes it to export markets at all, which adds another layer of scarcity on top of the labor cost.

That’s a similar dynamic to why first-harvest green teas command a premium over later flushes, except gyokuro adds the extra cost and risk of the shading process on top of that seasonal scarcity. A late frost, an uneven shading job, or a harvest delayed by even a few days can noticeably affect a season’s yield of high-grade gyokuro, which is part of why pricing can vary from year to year even among reputable producers.

Because caffeine content in green tea generally depends on the plant part, growing conditions, and processing method, gyokuro’s higher caffeine is really just one more downstream effect of all that extra cultivation effort, not a separate additive or shortcut. It’s the same underlying story that explains why caffeine levels vary so much across green tea in general even before shading enters the picture.
