How to Brew Each Type Well
Brewing sencha well really comes down to three variables working together: water temperature, steep time, and leaf quantity. How you balance them shifts depending on which steaming style you’re working with, and getting the balance wrong is usually the reason someone decides they don’t like sencha.
Asamushi wants cooler water and a touch more patience. Keeping the temperature on the gentler side helps avoid harsh astringency, and since the leaf is dense and slow to open, giving it a slightly longer steep with a generous amount of leaf per cup tends to bring out its brighter character without tipping into bitterness.
Chumushi is the most forgiving of the three, which makes it a comfortable place to start if you’re newer to sencha. A moderate temperature and a shorter steep than asamushi work well here, and small variations in either won’t really throw off the cup, which is part of why it’s the style most shops default to.
Fukamushi behaves differently because of how fine the leaf particles are. Where Sencha Sits in Japan’s Green Tea Lineup

Understanding what sencha tea actually is becomes clearer once you place this sencha green tea in context alongside its relatives. Japan produces a range of green teas from the same plant, and they’re differentiated mostly by cultivation method and processing.
Gyokuro is shade-grown for three to four weeks before harvest, which suppresses catechin production and amplifies L-theanine and chlorophyll. The result is a darker, sweeter, intensely umami tea, and a considerably more expensive one. Sencha is the everyday alternative, grown in full sun, more catechin-forward, less sweet, and widely available at every price point.
